Paula Chinchilla is a Certified Diabetes Educator and Diabetes Specialist Dietitian, currently working for the London North West NHS Trust, and has been living with type 1 diabetes since the age of 4 when she was diagnosed in her native Costa Rica. In 2018, Paula formulated a nutrition plan to support founder of DiAthlete, Gavin Griffiths, succeed in running 25 marathons in 1 month around the United Kingdom and Ireland.
